TYPICAL PRODUCTS AROUND
GROSSETO
Only agri-food
products that are given a European brand testifying their origin are
considered “typical”. Each of them must follow specific regulations
concerning their processing, origin of products used in processing, and
any other intervention that brings to the end product. What characterizes
typical products are: the history of the product, its origin, the quality
of the product before processing and the techniques used.
The following are the 7 main certifications:
1. DOC:
REGISTERED DESIGNATION OF ORIGIN ( D.O.C. )
& ( D.O.C.G. ) Guaranteed
It is a
national trademark attributed by decree to food coming from a limited area
and produced by using and processing the locally-sourced products
according to deeply rooted traditional methods. Apart from the product
specification, the decree defines physical, chemical and organoleptic
features. Moreover, it establishes the use of a graphic mark (trademark)
granted to products complying with such definition.

The DOC denomination was first created for wines and
cheeses, but today it has been extended to salamis, cold meats, olive oil,
fruit and vegetables.
2. PDO:
PROTECTED DESIGNATION OF ORIGIN ( D.O.P. )
This
acronym identifies the product's denomination. The production and
processing of the product must take place in a precise geographical area
characterized by a certified expert's assessment. The production
processmust comply with a list of regulations and features, connected
essentially or exclusively to the geographical environment and to human
and natural factors.

3. PGI:
PROTECTED GEOGRAPHICAL INDICATION (I.G.P.)
This
acronym as well is used to identify the product's denomination. It
generally refers to agricultural products or food coming from a specific
region or a well-defined area, where at least one of the two phases,
production or processing, must take place (Reg. CE 2081/92).
4. TSG:
TRADITIONAL SPECIALITY GUARANTEE ( S.T.G. )
It
recognizes the specific character of an agri-food product which stands out
among other similar products thanks to its quality features and the
tradition behind it. The objective of such an acronym is giving credits to
the traditional composition of the product disregarding its
geographical
origin. For this reason it is different from the two above-mentioned
trademarks (Reg. CE 2082/92).
5. IGT:
TYPICAL GEOGRAPHICAL INDICATION ( I.G.T. )
This is a
quality assignment given to house wines coming from generally wide
production areas and with less strict production specifications. Such an
indication may be accompanied by other information, such as the vine. IGT
wines have a French and a German correspondence, namely the "Vin de Pays"
and the "Landwein". This acronym therefore helps the consumer recognize
the production area of the product. These wines are basically obtained
from particular grapes coming from well defined areas. This qualification,
however, does not force the vine-growers to add further information on the
label (like the vine from which the wine originally comes) nor to follow
too strict production criteria. Before the 164/92 law came into force they
were called Geographical Indication wines and such an acknowledgment was
given on an annual basis. The production area taken into consideration
here is larger than the one for DOC products.

TRADITIONAL AGRI-FOOD PRODUCTS FROM TUSCANY
In 1999 the
Department for Economic Development of the Region Tuscany entrusted
A.R.S.I.A. with the mapping of the traditional Tuscany products, in
conformity with art. 8 of the Italian Legislative Decree n. 173/98
(regarding notices on production costs for the structural enhancement of
arable farms) and with the subsequent Implementation Decree made by the
Italian Ministry for Agricultural and Forestry Policies n.350 (8th
September 1999). Traditional Tuscany products are defined as products
whose processing, preservation and maturing have been consolidated over
the years and homogeneously practiced in the area according to traditional
rules for a period of minimum 25 years. The aim of this mapping was to
enumerate and identify the old niche productions which are characterized
by a strong historical and cultural tradition and, therefore, also by a
strong link to the area, in order to prepare a Regional List. The
following 78 Products were registred in the Province of Grosseto: meat 15,
condiment 1, cheese 6, fats 1, vegetable products 16, pastes 31, seafood
7, products of animal origin 1.
7. AGRIQUALITA’ (AGRIQUALITY)
It is the
trademark of the Region Tuscany that identifies and promotes agri-food
products complying with integrated agricultural techniques as defined in
the Regional Regulation 25/99 and in the related Regional executory
decision 47/2004.
